Hot chips are all around us, not only because of the global ubiquity of a giant chain of restaurants hosted by a creepy clown, but also because of air fryers, food delivery services, the supermarket frozen aisle, pubs and family-owned takeaway shops, and us, Restaurants!
It's time, though, that I drew your attention to the darker, uglier, less well known side of everyone's favourite salt, starch and oil delivery system. For I have conducted a years-long investigative expose of hot chips in restaurants: I call it Chipgate. So. Have you ever noticed that restaurant French fries often seem remarkably similar to the ones down the road at the gigantic fast-food chain? That's because, most likely, they are the f#&king same! In Australia, hardly any restaurants make their own chips. I'm not talking about fast-food joints, but actual reservation-only fancy restaurants.
I grew up harvesting Rua potatoes from the raised beds in my grandmother Lois's garden. We'd scrub off the moist dirt and peel them in her hand-cranked 'rumbler' before cutting and frying them. Lois had inexhaustible patience with me, as I would make chips in her kitchen nearly every time I visited. In the early 90s, when I was a teenager, I worked as a bicycle mechanic at a bike shop next to a takeaway shop. The owners cut their own chips at a bench in the car park and twice-fried them long and hard in tallow until they were thick, stumpy, potato-flavoured barnacles, as crusty as treasures found in the briny deep. Every lunchtime I'd scamper next door for a brown paper bag of these gems, the fissures in their deep golden-brown surface the perfect place for the flecks of salt to nestle. Those, friends, were truly the times. And they're also the reasons why Attica has always made hand-cut chips from seasonal varieties of potatoes sourced from 'Spud Sisters' Kerri and Catherine, third-generation potato farmers in Millbrook, Victoria. I'm sure you wouldn't expect any less of us.
And so, with all of that context firmly established, here are the nine shops Ben keeps coming back to. The ones that take chips seriously, cut their own, and understand that a great hot chip is not an afterthought. It is the whole point.

An old school take away joint, with the only chips on the menu being hand cut and cooked in tallow, this place is a local legend for a reason, and honestly one of the greatest food bargains in Australia. Service is kind and charming. I wish I lived closer!
Fishos Torqay
36 The Esplanade, Torquay VIC 3228
A big potato flavour on this generous serve of hand cut chips. Excellent service, a breezy beachside vibe, and plenty of people deciding to eat in. I prefer to take away, so I can eat at a bench on the beach after surfing.
Alex’s Fish and Chips and Takeaway
11 Ford Rd, Altona
This place is utterly charming, and this husband-and-wife duo have been hand cutting chips since 1979, and has cult following with a select few. When we arrived, the other people in the shop had all travelled specifically to have these chips. The prices are insanely good value, you order your chip ‘done-ness’, and Alex is so kind – offering little tastes of things while you wait for your order. I want to go back and try the burgers. Note: cash only!

Pollo Rotisserie

Wildly good with a deep potato flavour. These chips are super well-seasoned with homemade chicken salt, and nicely crispy but not overwhelmingly so. The side of gravy for dipping is an absolute must order – homemade and so much in a serve!
Northern Soul Chip Shop
6 Inkerman St, St Kilda
This one is a (longish) walk from home and Attica, but well worth it. English style hand cut chips, served with plenty of salt and optional (but highly recommended) malt vinegar. Order some homemade gravy on the side too! This place is usually busy, so be prepared to wait during peak times, but the line just increases the satisfaction of the crunch when you receive your piping hot chips.
North Road Fish & Chips
559 North Rd, Ormond
A local haunt with a nondescript front. Everyone knows the owner Bill, who is kind and welcoming. The chips are a softer, more old-fashioned style, and reminds me of my grandmothers’ chips in the best possible way, cooked only in tallow for a rich flavour. Such a lovely local place.

This place is constantly coming up in the best chip lists, and I can totally see why. So dedicated to the humble chip that they grow their own potatoes. It’s a bit of a drive, but if you are down on the peninsula visiting, holidaying, or living then it’s a must do. Plenty of outdoor seating, and heaping mounds of hot chips – what could be better?
Editas Fish ‘N’ Chips
382 Rathdowne St, Carlton North
Family run kitchen, triple cooked chips, the menu has Polynesian influence, and everyone goes for the fish burger, but we had a smashburger on the side of the delicious chips, and it was magic. Lines can get long so go early or late.
Stadium Geelong Fish & Chips
406 Latrobe Terrace, Geelong
You have to ask for hand cut chips here, which come out cooked in tallow and cut with a knife into large, potatoey chunks. Super crunchy, and right next to Geelong Stadium.
